Cosmic Vinyaters, Gratitud Blanc 2021

One of few wines from Cosmic Vinyaters that features non-local grapes, Gratitud is a master class in adapting Sauvignon Blanc to the Region Penedès.

Grown in limestone red clay soils in a Mediterranean climate 520 meters above sea level, the 20-year-old vines at Coll d’olivera (near El Montmell) are maintained with biodynamic farming and a more spiritual approach.

Hand-harvested and destemmed, skin-on maceration for 24 hours before pressing, then spontaneous fermentation from autochthonous yeast in stainless steel tanks, Aged on fine lees for 4 months and bottled unfiltered.

Smooth but not simple with a touch of spice, a hint of minerality, and a crisp finish. Sauvignon Blanc like you've not yet had it.
