Well balanced and fresh with good acidity. Soft tannins and a long finish. Lush 100 percent Cariñena Blanca (White Carignan) from vines planted in 1964 (near El Joan del Molí) and 1968 (Puig-Rodó) respectively.

Low intervention in the vineyards and in the cellar, with the fermentation and aging split between stainless steel, chestnut barrels, and clay amphore. Bottled unfined and unfiltered with very little SO2 (8mg/l).

This wine is, in the words of its creator, “made to worship the white Carignane as one of the best autochthonous varieties of the Empordà.” After a glass or two, you may find yourself speaking as reverently of it as Salvador does.
