An exceptional and labor-intensive dessert wine, embodying the richness of dried Garganega grapes.
Passito Monte Sorio 2016 is produced from 100% Garganega grapes, harvested from south-facing vines growing in volcanic and clay soils. These conditions, combined with biodynamic and certified organic farming practices, contribute to the wine's unique character and depth.
The grapes are hand-harvested in the fall and then hung on large screens outside, where they are exposed to the winds until December, allowing for natural drying and concentration of sugars. Fermentation occurs at the end of the year in open vats for approximately three weeks. Occasionally, small amounts of must are taken indoors to activate native yeast before returning to the vat, ensuring a natural fermentation process.
After pressing, the wine ages for eight to nine months in 1,500-liter barrels, followed by additional aging in tanks before bottling, which occurs three years after the initial harvest. The wine is bottled unfined and unfiltered, with no sulfur added, preserving its authenticity and complexity.
This dessert wine offers notes of hazelnuts, citrus, plums, and ginger, with a rich and luscious profile balanced by refreshing acidity. It serves as an excellent companion to cheeses and desserts, or can be savored on its own as a contemplative after-dinner drink.
